This Cast Iron Peach Cobbler Is the Soul of Summer in Every Bite

If you grew up smelling warm peaches and cinnamon baking in the kitchen, this Peach Cobbler will feel like home. Made with Del Monte peaches, buttery Pillsbury pie crust, and slow-baked in a cast iron skillet, this recipe by Stacey Miller-Jones (@whoozdatlady) and Metri Nunley-Lash (@meechnicole) is Southern comfort in dessert form.

It’s sweet, spiced just right, and topped with golden flaky crust that soaks up all that bubbling peach syrup. Whether you serve it at a family cookout or a Sunday dinner, this cobbler is guaranteed to bring folks back for seconds—and maybe even thirds.


Ingredients

  • 2 boxes Pillsbury pie crust
  • 4 (1.8 lb) cans Del Monte peaches, drained
  • 1 cup brown sugar
  • 2 cups white sugar
  • 1 stick salted butter (plus more for greasing the skillet)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • (Optional) 1–2 tablespoons Torani salted caramel syrup

Step-by-Step Instructions

1. Preheat the Oven

  • Set your oven to 400°F and allow it to fully preheat.
  • Lightly grease a cast iron skillet with a bit of butter.

2. Prepare the Peach Filling

  • In a large bowl, mix:
    • Drained canned peaches
    • White sugar
    • Brown sugar
    • Cinnamon and nutmeg
    • (Optional) Salted caramel syrup for an extra indulgent twist
  • Let the mixture sit while you prep your crust so the sugar begins to draw out the juices.

3. Layer the Cobbler

  • Unroll one box of pie crust and lay it into the bottom of the skillet, gently pressing it to cover the bottom and a bit up the sides.
  • Pour the peach filling evenly into the skillet.
  • Dot the top with sliced butter.

4. Add the Top Crust

  • Use the second box of pie crust to create your top layer—either lay it flat, cut strips for a lattice, or cut shapes for a rustic look.
  • Brush lightly with melted butter if desired and sprinkle a touch of sugar and cinnamon on top for extra crispness.

5. Bake

  • Place in the preheated oven and bake for 45 minutes, or until the crust is golden brown and the peach filling is bubbling.

6. Rest Before Serving

  • Let the cobbler rest for at least 30 minutes before serving. This helps the filling thicken up and gives the crust time to set.
