A Historic Spice Cake Rooted in Early American Baking Traditions

Long before butter was widely available, home bakers often relied on salt pork to add richness and moisture to cakes. Ohio Pork Cake is a fascinating example of early American baking, blending finely chopped salt pork with molasses, raisins, and warm spices to create a dense, flavorful cake that has stood the test of time. While the ingredient list may surprise modern bakers, the result is a moist spice cake with deep, comforting flavors.

Featured as a Heritage Recipe in The Black Family Reunion Cookbook, this vintage dessert preserves a traditional recipe that reflects the ingenuity of generations who made delicious baked goods from simple, readily available ingredients.

Ingredients

  • 1 cup finely chopped salt pork
  • 1 cup boiling water
  • 1/2 teaspoon baking soda
  • 1 cup molasses
  • 1 cup sugar
  • 1 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground cloves
  • 3 cups all-purpose flour

Makes: One cake

Step-by-Step Instructions

  1. Preheat the oven to 375°F and grease an 8-inch square baking pan.
  2. Place the finely chopped salt pork into a large mixing bowl. Pour the boiling water over it and allow the mixture to cool to room temperature.
  3. In a separate bowl, stir the baking soda into the molasses until dissolved.
  4. Add the molasses mixture, sugar, raisins, cinnamon, nutmeg, allspice, and ground cloves to the cooled salt pork mixture. Stir to combine.
  5. Gradually mix in the flour until the batter is just blended.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 1 hour to 1 hour 15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool before slicing and serving.

Pro Tips & Suggestions

  • Finely chop the salt pork so it blends evenly into the batter and melts during baking.
  • Allow the pork mixture to cool completely before adding the remaining ingredients.
  • Serve the cake the next day for even deeper spice flavor and a moister texture.
  • Enjoy with whipped cream or a dusting of powdered sugar for a simple presentation.
  • Store tightly wrapped at room temperature for several days, as spice cakes often improve with time.
