Classic New Orleans Magic in Every Bite

Crispy on the outside, airy on the inside, and blanketed in powdered sugar—New Orleans-style beignets are the ultimate indulgence. Originating in the French Quarter and made famous by cafés like Café du Monde, these pillowy pastries are a soulful Southern classic you can now make at home.

The beauty of this recipe lies in its balance: a rich, yeast-leavened dough infused with vanilla bean, rolled and cut into delicate squares, then fried to golden perfection. Served warm with coffee or enjoyed solo, these beignets are a sweet reminder of the bold flavors and traditions rooted in Black Southern cuisine.


Ingredients

For the Dough:

  • ¾ cup warm milk (activates the yeast)
  • ¼ cup sugar (for subtle sweetness)
  • 2¼ tsp active dry yeast (1 packet)
  • 1 large egg
  • 1 tsp vanilla extract
  • Seeds from 1 vanilla bean (optional but recommended)
  • 2¾ cups all-purpose flour
  • ½ tsp salt

For Finishing:

  • ¼ cup softened butter (add gradually into the dough)
  • Vegetable oil, for frying
  • Powdered sugar, for coating
  • Flour, for dusting the surface

Step-by-Step Instructions

1. Activate the Yeast

  • In the bowl of a stand mixer, combine warm milk, sugar, and active dry yeast.
  • Let sit for 10 minutes until bubbly and foamy.

2. Mix the Dough

  • Add in the egg, vanilla extract, and vanilla bean seeds.
  • Then stir in the flour and salt.
  • Knead on medium speed for 5 minutes until combined.

3. Incorporate the Butter

  • Gradually add softened butter, a few pieces at a time.
  • Continue kneading until the dough is smooth and elastic.

4. First Rise and Chill

  • Transfer the dough to a greased bowl, cover.
  • Let it double in size at room temperature.
  • Refrigerate for a few hours or overnight.

5. Shape the Beignets

  • Roll dough on a floured surface to ½ inch thickness.
  • Cut into 2-inch squares and place on a parchment-lined baking sheet.

6. Second Rise and Fry

  • Let dough squares rise for 30–40 minutes.
  • Fry in 365°F oil for 45 seconds per side, until golden and puffed.

7. Drain and Sugar Coat

  • Drain beignets on a wire rack.
  • Generously coat with powdered sugar while still warm.

  • Don’t skip the second rise — it gives beignets their signature airiness and puff.
  • Use a candy thermometer to keep oil at the perfect 365°F for even frying.
  • Go big with the powdered sugar — New Orleans style means no holding back.
