When you’re craving something warm, crispy, and totally satisfying, this Potato and Egg Omelette delivers every time. Made with golden sautéed potatoes, seasoned eggs, and fresh herbs, it’s the kind of dish you can serve for breakfast, lunch, or a late-night fix.

Think of it as a loaded skillet—but easier, fuss-free, and ready in minutes. It’s hearty, budget-friendly, and full of bold flavors thanks to green onions, paprika, and fresh coriander. Whether you’re feeding yourself or a crew, this one’s guaranteed to leave no crumbs.


Ingredients

6 medium potatoes

4 eggs

2 sticks green onions, chopped

1 bunch fresh coriander leaves, chopped

1 tsp paprika powder

½ tsp black pepper

½ tsp salt

¼ tsp chili flakes (optional, for heat)

Butter or vegetable oil for cooking


Step-by-Step Instructions

Step 1: Prep the Potatoes

  • Set aside in a bowl.
  • Peel and grate the potatoes, then squeeze out any excess moisture using a clean kitchen towel or cheesecloth.

Step 2: Whisk the Eggs

  1. In a separate bowl, crack and beat the eggs until smooth.
  2. Mix in the paprika, salt, black pepper, and chili flakes (if using).
  3. Fold in the chopped green onions and coriander.

Step 3: Combine and Cook

  1. Add the grated potatoes to the egg mixture and stir until fully coated.
  2. Heat butter or oil in a non-stick pan over low heat.
  3. Pour in the potato-egg mixture and spread evenly across the pan.
  4. Cover with a lid and cook for 5 minutes on one side.
  5. Carefully flip and cook the other side for another 5 minutes until golden and fully cooked through.

Use a wide spatula or plate to flip the omelette cleanly.
