King trumpet mushrooms are the MVPs of the mushroom world—meaty, juicy, and incredibly versatile. When sliced into rounds and punched with holes, they become a seafood-style bite that’s completely plant-based. Paired with a spicy Bang Bang-style vegan mayo, this recipe is not only easy but packed with flavor. Whether you’re hosting friends or craving something crispy, this one delivers.
Ingredients
For the Calamari:
King trumpet mushrooms (use both tops and stems)
Flour (for batter and dredge)
Water
Sea kelp granules
Paprika
Old Bay seasoning
Pepper (to taste)
For the Spicy Bang Bang Sauce:
Vegan mayonnaise
Cayenne pepper
Paprika
Sugar
Step-by-Step Instructions
Step 1: Slice & Shape
Cut off the tops and bases of your king trumpet mushrooms.
Slice the stems into ½-inch thick rings.
Use a straw or small cutter to punch a hole in the middle of each slice to create “calamari” rings.
Shred the mushroom tops into thin strips for extra crispy bites.
Step 2: Make the Batter
Combine flour, water, kelp granules, smoked paprika, Old Bay seasoning, and black pepper in a bowl.
Stir until smooth. The batter should be thick enough to coat the mushrooms without sliding off.
Step 3: Season the Dry Mix
In a separate bowl, add another scoop of flour.
Mix in kelp granules, smoked paprika, Old Bay, and black pepper.
This seasoned dry mix will give the outer layer extra crunch.
Step 4: Coat & Fry
Dip each mushroom ring into the wet batter.
Roll it in the dry mix to fully coat.
Heat oil in a pan over medium-high heat.
Fry the rings for 2–3 minutes per side or until golden and crispy.
Transfer to paper towels to drain.
Step 5: Whip Up the Sauce
Mix vegan mayo, cayenne pepper, smoked paprika, and sugar in a small bowl.
Stir until smooth and creamy.
Taste and adjust seasoning as needed.
Step 6: Plate & Serve
Plate your hot, crispy vegan calamari.
Serve with a side of Bang Bang sauce for dipping.
Garnish with lemon wedges or herbs if desired.

Mushroom magic: King trumpet mushrooms give you that chewy, seafood-like bite. Don’t skip them.
Get it crispy: That dry dredge step is what makes these rings extra crunchy. Double-dipping is the move.
Switch it up: Feel free to play with the dipping sauce. Try hot sauce, garlic, or even maple for a sweet kick.
Party-approved: These are made for sharing. Perfect for game day, brunch spreads, or happy hour.
