Cooking spray or oil
6–12 eggs(depending on how many bites you want to make—1 egg per muffin tin)
Shredded cheddar cheese, for topping
Step-by-Step Instructions
1. Prep Your Veggies
Chop the spinach, red onion, and bell peppers into small, bite-sized pieces.
Add them to a mixing bowl and season with kosher salt and black pepper to taste.
