Ingredients
- ¼ cup oyster sauce
- 1 lb large shrimp, peeled and deveined
- 1½ tsp curry powder
- ⅛ tsp garam masala
- 1 tsp onion powder
- 1 tsp smoked paprika
- 2 Thai chili peppers, whole (or chopped for extra heat)
- ½ tsp salt
- ½ tsp black pepper
- 1 cup green beans, chopped
- 2 bell peppers, sliced
- 1 ripe mango, diced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, chopped
- 2 tbsp soy sauce
Step-by-Step Instructions
Step 1: Prep Your Ingredients
- Dice the mango into small cubes.
- Chop the green beans and slice the bell peppers into thin strips.
- Mince the garlic and finely chop the ginger.
- In a small bowl, mix together the oyster sauce and soy sauce.
Tip: Having everything prepped before cooking is key to a smooth stir-fry!

Step 2: Season and Cook the Shrimp
- In a bowl, season the shrimp with curry powder, garam masala, onion powder, smoked paprika, salt, and pepper.
- Heat a pan or wok over medium-high heat and add a splash of oil if needed.
- Add the shrimp and stir-fry for 2–3 minutes per side, just until pink and opaque.
- Remove from the pan and set aside.

Step 3: Sauté the Aromatics & Veggies
- In the same pan, add garlic, ginger, and whole Thai chili peppers. Sauté for 30 seconds, stirring constantly.
- Add the green beans and bell peppers, and stir-fry for 3–4 minutes until tender but still crisp.

Step 4: Add the Mango & Sauce
- Gently stir in the diced mango so it holds its shape.
- Return the cooked shrimp to the pan.
- Pour in the soy sauce + oyster sauce mixture.
- Stir everything together and let cook for 1–2 more minutes until the sauce coats the ingredients evenly.

Step 5: Plate and Enjoy!
- Remove from heat and serve hot.
- Enjoy on its own or over steamed rice, jasmine rice, or noodles.
- Garnish with fresh cilantro or a squeeze of lime juice for a bright finish.
Pro Tips & Serving Suggestions
- Thicker Sauce? Mix ½ tsp cornstarch with 1 tbsp water and stir it in before adding the shrimp for a slightly thicker glaze.
- Bring the Heat: For a spicier dish, chop the Thai chilis before adding them.
- Choose the Right Mango: A ripe-but-firm mango delivers the perfect balance of sweetness and texture.
- Don’t Overcook Shrimp: Cook just until pink and opaque—overcooked shrimp become rubbery.
- Add Some Crunch: Throw in a handful of cashews or peanuts before serving for added texture.
