Each year on April 8th, National Empanada Day recognizes a delicious pastry that comes in several different forms. The name empanada comes from the Galician, Portuguese and Spanish verb em pandar, meaning to wrap or coat in bread.
Origins: The dish is also popular in Latin American and southern European countries. The exact origins of empanadas are linked to Portugal and Galicia (Spain.) The pastry made its first appearance during the Moorish invasions in Medieval Iberia.
