Classic Southern Fried Pork Chops Simmered in Tomato Gravy

Fried Pork Chops are a comforting Southern favorite, featuring crispy breaded pork chops that are lightly fried before being gently simmered in a savory tomato gravy with onions, green peppers, and stewed tomatoes. The result is tender, flavorful pork with a rich sauce that’s perfect served over rice or alongside mashed potatoes.

Ingredients

  • 6 pork chops
  • 1 cup milk
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 Tablespoon flour
  • 1/2 cup water
  • 1/2 green pepper (chopped)
  • 1/2 onion (chopped)
  • 1 cup stewed tomatoes and juice
  • Salt and pepper to taste

Instructions

  1. Season the pork chops with salt and pepper and let them rest for about 10 minutes.
  2. In a shallow bowl, whisk together the eggs and milk.
  3. Dip each pork chop into the egg mixture, then coat evenly with the breadcrumbs.
  4. Heat hot grease or oil in a large skillet over medium heat.
  5. Fry the pork chops until golden brown, turning only once during cooking.
  6. Remove the pork chops from the skillet and pour off most of the grease, leaving about 2 tablespoons in the pan.
  7. Stir the flour into the remaining grease to create a light roux.
  8. Add the water, chopped green pepper, chopped onion, and stewed tomatoes with their juice. Stir until combined.
  9. Return the pork chops to the skillet, cover, and simmer for 30 to 40 minutes, or until the pork is tender and fully cooked.
  10. Serve hot with the tomato gravy spooned over the pork chops.
