Spicy-Sweet Goodness You Can Sip

If you love a drink with a little bite, this Homemade Ginger Syrup is about to be your new favorite flavor weapon. Whether you’re crafting a homemade ginger soda, adding punch to your mocktails, or drizzling it into tea, this syrup hits the sweet spot between spicy and soothing.

Made with fresh ginger root, brown and white sugar, and simmered to bold perfection, it brings natural heat and depth without any of the artificial stuff. It’s easy to make, versatile, and keeps well—perfect for mixing up drinks all week long.

Ingredients

  • 1 1/2 cups fresh ginger, peeled and sliced
  • 2 cups water
  • 1/2 cup brown sugar
  • 1/2 cup white sugar

For Serving:

  • Ice
  • Sparkling water
  • Lime wedge or juice
  • Homemade ginger syrup (to taste)

Step-by-Step Instructions

Step 1: Prep the Ginger

  • Wash and peel the ginger root.
  • Slice it into thin rounds—aim for about 1 1/2 cups of sliced ginger.

Step 2: Simmer the Syrup

  • Add sliced ginger, water, brown sugar, and white sugar to a pot.
  • Stir and bring to a gentle boil, then reduce heat to simmer.
  • Simmer uncovered for about 20 minutes.

Step 3: Strain and Store

  • Remove from heat and let cool slightly.
  • Strain out the ginger pieces using a fine mesh sieve.
  • Pour syrup into a clean mason jar or airtight container.
  • Store in the fridge for up to 2 weeks.

Step 4: Serve It Up

  • Fill a glass with ice.
  • Add sparkling water and a few spoonfuls of the ginger syrup (to taste).
  • Squeeze in some lime juice, stir, and enjoy.
